REDI-MIX HOT ROLLS 
1/2 c. oil
2 pkg. dry yeast
1/4 c. warm water
2 1/2 c. buttermilk
5 c. flour
4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. sugar
2 eggs, slightly beaten
1 c. mashed potatoes (instant okay)

Dissolve yeast in warm water. Sift dry ingredients together. Add liquid ingredients and combine. Add eggs and mashed potatoes.

Store in covered container in refrigerator. When ready to use, take amount needed for a meal. Pinch off and form into a ball and flatten a little.

Bake 10 minutes at 375°F. Dough does not need rising time. May be kept 2 weeks.

Makes 3 to 4 batches.
