MOIST POTATO BREAD | |
2 pkgs. yeast 1 c. potato water 1 c. mashed potatoes (fresh) 2 tbsp. sugar 2 c. milk, scalded and cooled 3 tbsp. vegetable oil 2 1/2 tsp. salt Flour - about 8 c. Boil potatoes - drain and save liquid. Mash potatoes, cool to lukewarm. Sprinkle dry yeast in warm potato water, let stand a few minutes. Add mashed potatoes, sugar, scalded milk, vegetable oil, salt and about 1/2 of the flour. Beat until smooth. Add enough more flour to make a stiff dough that will not stick to bowl. Turn out on floured surface and knead until smooth and satiny. Put into greased bowl, turn once, cover and let rise until double in size. Shape in 3 loaves and put in greased pan. Let rise until double and then bake at 350 degrees about 40 minutes or until brown. |
