JUMBALAYA 
1 lb. spicy sausage
2 cloves garlic
1 c. each green pepper, celery and onions, sliced
1/2 c. green onions
1 c. uncooked rice
2 c. water
1 (16 oz.) can whole tomatoes
1/3 c. fresh tomatoes
1 lb. shrimp
2 tsp. creole seasoning, or salt, red and black pepper

Saute sausages, green pepper, garlic, celery and onions. Drain grease. Stir in remaining ingredients, bring to a boil. Turn down and simmer covered 1/2 hour. If brown rice is used, use 2/3 cup more water and cook at least 1 hour. This is hot, if you don't want it quite this hot use less seasoning.
