THICK VEGETABLE SOUP | |
2 qt. water (or more if needed) 1 med. onion, diced 1 lg. carrot, diced 1 stalk celery, diced 1 med. white turnip, diced 1 med. potato, diced 1/8 c. med. barley 1 can no-salt tomatoes 1/4 tsp. salt 1 tbsp. dried parsley Few shakes salt substitute (see recipe in Potpourri section) Simmer on low heat for an hour. |
