BLUEBERRY COBBLER 
1 (10 oz.) pkg. frozen unsweetened blueberries, partially thawed
1 tbsp. cornstarch
1 tsp. lemon juice nonnutritive sweetener
1/2 c. buttermilk biscuit mix
3 tbsp. milk

About 30 minutes before serving. Preheat oven to 400 degrees. In 1 quart safe for the range top use casserole over medium heat, cook blueberries, cornstarch, lemon juice and nonnutritive sweetener equivalent to 1 tablespoon sugar until mixture thickens, stirring constantly.

In small bowl, stir biscuit mix, milk and nonnutritive sweetener equivalent to 1 tablespoon sugar until smooth; drop by tablespoonfuls on top of blueberry mixture. Bake 15 minutes until biscuits are light brown. Makes 4 servings.
