ORANGE DELIGHT TAPIOCA 
1/2 c. Minute tapioca
1 qt. water
1/4 c. sugar
1/8 tsp. salt
1 c. concentrated orange juice, thawed
1 c. orange segments and juice
1 pkg. frozen peaches, thawed
1 1/2 c. bananas

Bring tapioca and water to a boil over medium heat, stirring often. Remove from heat. Stir in sugar, salt, and orange juice. Chill. Before serving, fold in the fruit. Top with whipped cream, if desired.
