CHICKEN CASHEW CASSEROLE | |
4 c. seasoned dressing cubes (herb bread cubes) 1 med. onion, chopped 1 c. celery, chopped 1/2 c. melted butter 1 1/2 c. very hot water 1 can undiluted cream of mushroom soup 1/2 to 1 c. salted cashew nuts 3 c. boned, cooked chicken (4 to 5 cans of boned chicken can be used) In small pan saute onion and celery in butter. Add mixture to the seasoned cubes and add hot water. Mix well. Cut chicken into small pieces. Put 1/2 of the dressing mixture into casserole dish, top with half of the chicken and then top with 1/2 of the soup. Repeat with the remaining chicken, dressing and soup. Top with the cashew nuts and bake at 350 degrees for 45 minutes to 1 hour. (Turkey can be used instead of chicken.) Serves 4 to 6. Microwave 18 to 20 minutes. |
