ZUCCHINI PIE 
1 c. Bisquick mix
4 eggs
1/2 c. vegetable oil
1/2 c. Logatelli cheese or Parmegigno
1 tsp. parsley flakes
1/4 tsp. salt
1/4 c. black pepper
1/4 c. chopped onion

Mix eggs with Bisquick until well mixed, add all of the above. Mix again.

Add 3 cups diced zucchini, mix again.

Spray a pie pan with Pam. Bake in 350 degrees for 30 to 35 minutes.
