CAULIFLOWER CASSEROLE 
1 c. minute rice
3/4 c. chopped onion
3/4 c. chopped celery
1 (20 oz.) bag California blend vegetables
1 can cream of mushroom soup
1 can cream of chicken soup
1 stick butter, melted

Mix in 9 x 13 inch pan and top with 4 ounces shredded Cheddar cheese. If it seems too dry, add some milk to make more moist. Bake at 350 degrees for 45-60 minutes.
