SPICY MEAT LOAF | |
2 tbsp. butter 1/2 c. chopped onion 1/2 c. chopped celery 1/2 c. finely minced carrot 2 cloves garlic, finely minced 1/2 c. chopped green bell pepper 2 eggs 1/2 c. catsup 1/2 c. evaporated milk 1/2 tsp. salt 2 tsp. chili powder 1/2 tsp. ground allspice 1/2 tsp. freshly ground black pepper 1/4 c. finely chopped fresh parsley 1 1/2 c. fresh bread crumbs 1 1/2 lbs. lean ground beef 1/2 lb. lean ground pork 2 slices bacon Saute the onion, celery, carrot, pepper and garlic in the butter until tender and just beginning to brown. In a bowl beat the eggs and add the remaining ingredients, except the bacon. Add the sauteed vegetables and mix well with your hands. Shape meat into an oval shape in an oiled 10"x6" casserole. Top with the bacon. Bake 45 minutes at 350 degrees. Drain off fat. Allow to stand for 10 minutes before serving. Can also be served cold. 6 to 8 servings. |
