STIR - FRIED OKRA 
2 c. (1/2") thick sliced okra
1 sm. onion, diced
1 med. size green pepper
1/2 c. diced celery
1/2 tsp. salt
1/8-1/4 tsp. crushed thyme leaves
3 tbsp. hot salad oil
1 med. tomato, cut into 8 wedges
Soy sauce to taste

Stir fry okra, onion, green pepper, celery, salt, pepper and thyme in hot oil over high heat 6-10 minutes; add tomatoes for 2 additional minutes. Sprinkle with soy sauce. Yield 4-6 servings.
