STUFFED CAULIFLOWER 
2 heads cauliflower (medium)
1 c. green peas
1 bunch cilantro, fresh
1 med. serrano or jalapeno pepper
3 tbsp. grated coconut
3/4 tsp. sugar
1/2 lemon, juiced
Salt, to taste
Sugar, to taste
1 c. ketchup
1 tbsp. butter
1 tsp. all purpose flour
1/4 c. water

Remove the green stems and leaves from the cauliflower and wash. Place cauliflower on a microwaveable platter and cook in microwave until tender but crisp, 10 to 15 minutes. Ground cilantro, pepper, coconut, sugar and lemon juice into a paste, salt to taste. Stuff the cauliflower with the paste from the underside. Keep the cauliflower warm in a 200 degrees oven. Put the butter and flour in a saucepan, cook on medium high heat for 1 minute. Add the ketchup and water to the butter mixture. Boil for 1 minute. Add the salt and sugar, to taste. Just before serving, pour the hot sauce over the cauliflower. If the sauce gets thick, add a little water. Decorate with green peas.

Since microwave ovens vary in power, you may need to adjust your cooking time.
