BEEF-MUSHROOM QUICHE 
1 (9 inch) unbaked pie shell
1/2 lb. ground beef
1 can undiluted cream of mushroom
1/2 c. milk
2 or 3 eggs slightly beaten
2 tbsp. chopped chives
1/4 tsp. salt
White pepper a pinch
1 or 2 cans mushroom pieces, drained
3/4 c. shredded Swiss cheese

Brown beef, stirring. Drain grease. Mix soup, milk, eggs and spices together. Add beef, mushrooms and cheese. Pour into partially baked pie shell. Put a strip of wet cloth around edge of crust to prevent from getting too brown. Bake 60 minutes or until knife inserted in center comes out clean. Cut into 8 pieces.
