ANGIE'S RATATOUILLE 
This is a great low-cal dish if you're on a diet.

4 tbsp. olive oil
1 onion, peeled & sliced
4 c. celery
2 lbs. eggplant, cut into lg. chunks
4 zucchini, sliced
6 tomatoes, cut up
2 cloves garlic
Salt & pepper to taste
Fresh parsley, chopped

Cook all the above ingredients in a large non-stick pot for about 20 minutes. For a special side dish, scoop into individual ovenproof dishes, top with your favorite cheese and put into 350 degree oven for a few minutes, or serve with bowtie pasta and basil. MMMMMM good!
