CANTALOUPE MOUSSE 
About 1/3 ripe, med. cantaloupe, cleaned, pared and chunked
1/4 c. cold water
1 packet unflavored gelatin
1 c. whipping cream
2 egg whites
1/3 c. sugar
Cantaloupe balls and mint leaves for garnish

Puree melon in blender to equal 1 cup.

In saucepan, sprinkle gelatin over cold water. Heat carefully to completely dissolve. Cool and add to melon.

Whip cream until soft peaks form.
