ZUCCHINI BREAD 
3 lg. eggs
1 c. Crisco oil
2 c. sugar
3 tsp. vanilla
3 c. flour
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. peeled, ground zucchini
1/2 c. chopped nuts

Sift together flour, cinnamon, salt, baking powder and baking soda. Set aside. Blend then beat together well eggs, oil, sugar and vanilla. Add dry ingredients, zucchini and nuts to above and stir well. Grease and flour a loaf pan. Bake 50 minutes to 1 hour at 350 degrees.
