1 (8 oz.) pkg. light Philadelphia brand Neufchatel cheese, softened
1 c. butter
3/4 c. sugar
1/2 tsp. almond extract
2 1/2 c. flour

Combine cheese, butter, sugar and extract, mixing well. Add flour; mix well. Chill several hours or overnight.

On lightly floured surface, roll dough to 1/8 inch thickness; cut with 2 1/2 to 3 1/2 inch cutters. Place on ungreased cookie sheet. Bake at 375 degrees 6 to 8 minutes or until edges are lightly browned. Makes about 5 dozen.
