TOFU SALAD 
1/3 c. mayonnaise
1 carrot, sliced
10 olives, sliced thin
1 lb. tofu, sliced into sm. cubes
2 stalks celery, chopped
Salt and pepper to taste
Toasted bread

Toss together cubed tofu and sliced carrots, celery and olives with a dash of salt and pepper; add mayonnaise and mix. Serve on or with toasted bread.

Serves 8.
