SWEET AND SOUR HALIBUT 
2 lbs. halibut
Salted water to cover fish
1/2 dry onion, chopped
1 slice lemon
1 sprig parsley, chopped
Several peppercorns
1 clove garlic, minced
Pineapple juice plus water to equal 1 c.
4 tsp. cornstarch
2 tbsp. brown sugar
1/4 c. cider vinegar
1 tbsp. soy sauce
8 oz. drained pineapple chunks
1/2 green pepper, chunked
3 green onions, sliced
2 tbsp. sherry

Place halibut in simmering salted water seasoned with onion, lemon, parsley, peppercorns and garlic. Cover and simmer five to seven minutes or until halibut flakes when tested with fork. Drain.

With the one cup of pineapple juice and water, combine cornstarch, brown sugar, vinegar and soy sauce. Cook, stirring constantly, until thick and clear.

Add pineapple chunks, green pepper chunks, green onion slices and sherry. Cook one minute longer. Pour over poached halibut. Serve and enjoy.
