PUREE OF BROCCOLI 
1 bunch of broccoli
1 can chicken broth
4 tbsp. butter
1/2 tsp. finely minced garlic
3 tbsp. Parmesan cheese
Salt and pepper to taste

Wash broccoli, trim off tough stem and leaves and chop coarsely. Put in saucepan with chicken broth, bring to boil and simmer until tender, but not overcooked. Reserve liquid and freeze (for soup, etc.). Put drained broccoli through a food mill or puree in food processor, including the garlic in this step. Heat in a saucepan while stirring in butter, salt, pepper and cheese.
