HONEY-CARROT RING | |
2 tbsp. plain gelatin 1 c. cold water 1 c. boiling water 1/4 c. honey 1/2 c. lemon juice 1/2 tsp. salt 1 1/2 c. (firmly packed) grated raw carrots Soften gelatin in 1/2 cup cold water. Add boiling water, honey, 1/2 cup cold water, lemon juice, and salt. Chill until slightly thickened. Fold in raw carrots and turn into 1-quart ring mold; chill until firm. Unmold on bed of crisp lettuce. Fill center of ring with cottage cheese, fruit, or vegetables. Serve with French dressing or mayonnaise, if desired. Serves 8. See how much brighter my eyes are now that I have eaten this mouthful of honey. |
