MUSHROOM - BARLEY SOUP | |
1 1/2 c. barley 1 recipe beef broth 1/2-3/4 lb. mushrooms, sliced Soak barley for several hours or overnight in enough water to cover. Heat broth boiling. Add barley with its soaking liquid. Cover and simmer 2-2 1/2 hours or until barley is tender. Add mushrooms. Simmer 10-20 minutes. (75 calories per cup.) Variation: Add 3/4 pound extra lean ground round, cooked and drained, to broth. Serve at once. |
