ONION PIE 
1 c. Ritz crackers, finely crushed
1/4 c. butter plus 2 tbsp., melted
2 c. Vidalia onions, thinly sliced
2 eggs
1/4 c. milk
3/4 tsp. salt
Dash of pepper
1/4 c. sharp cheddar cheese, grated
Paprika
Parsley, opt.

Mix cracker crumbs with 1/4 cup butter. Press into 8 inch pie plate. Saute onions in 2 tablespoons butter until translucent, but not brown. Spoon into crust. Beat eggs with milk, salt and pepper. Pour this mixture over onions, sprinkle with cheese and paprika and bake at 350 degrees for 30 minutes. Garnish with parsley. Great with steak!
