SPINACH SQUARES | |
4 tbsp. butter 3 eggs 1 tbsp. garlic powder (not salt) 1 c. flour 1 c. milk 1 tsp. salt 1 tsp. baking powder 1 lb. grated Cheddar cheese 2 pkg. frozen chopped spinach (thawed & drained) 2 tbsp. chopped onion Pepper Preheat oven at 350 degrees. Place butter into baking dish to melt while preheating oven. In large bowl beat eggs. Add flour, milk and baking powder; mix well. Add grated cheese, spinach, onion and seasoning. Mix well. Spoon into baking dish and level off. If you're not a lover of garlic, use seasoned salt or other favorite seasoning. This is good served warm or cold. Cut into small squares. I sometimes bake in 2 small pie plates and serve a wedge with salad for a light lunch. Bake at 350 degrees for 35-40 minutes. Will be slightly brown on top. Let cool before cutting. This will also freeze well. Defrost and reheat at 300-325 degrees for 12-15 minutes. |
