FETTUCINI WITH ZUCCHINI &
MUSHROOMS
 
2 tbsp. salt
1 tbsp. olive oil
8 oz. fresh mushrooms, sliced
1/4 c. butter
1 1/2 lbs. sm. zucchini, cut into sm. strips
1 c. whipping cream
1/4 - 1/2 c. butter, cut up
3/4 c. grated Parmesan cheese
1/4 c. snipped Italian parsley
Salt & pepper
Fettucini noodles

Bring a large amount of water to boiling with the 2 tablespoons salt and 1 tablespoon olive oil. Cook the pasta in boiling water for 7 minutes, then drain.

Meanwhile, in a large skillet, saute mushrooms in 1/4 cup butter over medium heat for 2 minutes. Add zucchini, cream and remaining butter. Bring to boiling; simmer, covered for 3 minutes. Add pasta to the mushroom mixture in skillet. Add Parmesan cheese and parsley, tossing until all is mixed. Season to taste with salt and pepper. Sprinkle with additional Parmesan cheese when serving.
