LITTLE CHEESECAKES 
2 (8 oz.) pkg. cream cheese
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
1 box vanilla wafers
Pie filling (your favorite)
Cupcake liners (regular size)

Heat oven at 375 degrees. Soften cream cheese in microwave. Beat cream cheese, eggs, sugar, lemon juice and vanilla well. Place vanilla wafer in bottom of cupcake liner, then pour beaten mixture on top of cookie about 2/3 full. Bake 15 to 20 minutes. Cool; remove from papers and top with fruit filling.

Since microwave ovens vary in power, you may need to adjust your cooking time.
