LISA'S MEXICAN CORN BREAD 
2 c. corn meal
1 c. flour
1 tsp. salt
1 tbsp. baking powder
2 c. milk
1 tsp. sugar
1/4 c. melted shortening
3 eggs
1/2 c. chopped jalapeno peppers
1/2 lb. fried bacon, crumbled
1/4 c. chopped pimentos
1 c. whole kernel canned corn
1 clove garlic, minced
1 lg. onion, chopped
1 1/2 c. grated cheese

Mix all ingredients in a large bowl. Pour into a greased pan (large iron skillet or 9 x 13 inch Pyrex works fine). Bake at 375 degrees for 35-45 minutes.
