COCONUT PINEAPPLE PIE 
3 eggs
1/4 cup plus 2 tbsp. butter, melted
1 1/2 cup sugar
3 tbsp. plain flour
1 cup crushed pineapple, drained
1 cup flaked coconut
1 unbaked pie shell

Beat eggs well. Stir in next 5 ingredients, mixing well. Pour mixture into pie crust and bake at 350°F for 50 minutes or until filling is set.
