ARKANSAS PEANUT, BANANA MUD PIE
2 c. ground Cheez-it cracker crumbs
2 tbsp. butter melted or vegetable oil

FILLING:

3 bananas
1/3 c. crunchy peanut butter
1/2 c. powdered sugar
1 1/2 c. milk
1 sm. pkg. French vanilla pudding
4 oz. semi-sweet chocolate bits and chopped peanuts or Reese's peanut butter cups
2 tbsp. water
1/3 c. honey

Crust: Blend crackers in blender until almost like flour. Combine with rest of crust ingredients and press into 9 inch pie pan. If mix sticks to hands, dip hands into water to prevent sticking.

Filling: Arrange a layer of sliced bananas in crust. Mix together peanut butter and powdered sugar. Put mixture in crust on top of bananas. Cook milk and pudding until bubbly; let cool; pour into crust. Top with melted semi sweet chocolate and chopped peanuts or with crumbled Reese's peanut butter cups.

Chill and top with whipped cream.

My mother made this for church socials in Arkansas.
