APRICOT DESSERT 
38 Ritz crackers, crushed
1 stick butter, melted
4 egg whites
1/4 tsp. cream of tartar
1 c. white sugar
1 can apricot pie filling
8 oz. carton Cool Whip
Toasted coconut or nuts

BASE: Mix together crushed crackers and melted butter. Press down in 9x13 inch pan. Refrigerate.

Beat egg whites until stiff with cream of tartar. Then gradually add 1 cup of white sugar, beating continuously. Put on top of Ritz cracker base. Bake at 350 degrees about 20-25 minutes. Watch carefully so it doesn't get brown. Cool.

Put apricot pie filling on top of meringue, etc. Then put 8 oz. carton of Cool Whip on top of filling. On top, put toasted coconut or nuts.
