BRUNCH SOUFFLE 
2 c. soft bread cubes
8 eggs, beaten lightly
2 c. milk
1 c. cheddar cheese
1 c. Swiss cheese
1 med. onion, chopped and sauteed
1/4 lb. Lox chopped
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
1/4 tsp. cayenne powder (optional)

Grate or finely chop cheese (1 pound = 2 cups). Mix all ingredients and pour into lasagna pan. Bake at 350 degrees for 45 minutes. Remove from oven and cut portions for 10 in pan and serve. Serves 10.
