BLACK BEAN SALAD 
2 (15 oz.) cans black beans, drained and rinsed
1 c. chopped tomato
3/4 c. chopped sweet red pepper
2/3 c. sliced green onions
1/2 c. chopped celery
1 tbsp. lemon rind
1 clove garlic, minced
2 tbsp. chopped cilantro leaves (optional)
1 (0.7 oz.) envelope Italian salad dressing mix
3/4 c. water
1/4 tsp. red pepper
2 tbsp. olive oil

Combine first 7 ingredients and, if desired, cilantro leaves; set aside. Combine dressing mix and remaining ingredients in a jar. Cover tightly; shake vigorously. Pour dressing over salad, and toss gently. Cover and chill. Toss gently before serving. Yield: 8 servings, 140 calories per 3/4 cup serving.
