PUMPKIN CAKE 
1 pkg. yellow cake mix
1/4 c. water
3 eggs
1 (16 oz.) can pumpkin
2 tsp. baking soda
2 tsp. pumpkin pie spice

Heat oven to 350 degrees. Grease and flour a 9 x 13 inch pan or 12 cup bundt pan. Combine soda, spice with cake mix. Add other ingredients. Beat on low speed until moistened, then beat 2 minutes on medium speed. Bake 40 to 45 minutes. NOTE: One can pumpkin pie mix can be substituted for the pumpkin and pumpkin pie spice. Serve with Butterscotch Sauce.

BUTTERSCOTCH SAUCE (Makes 2 cups) :
3/4 c. sugar
1/2 c. light corn syrup
1/4 tsp. salt
1/4 c. butter
1 c. cream
1/2 tsp. vanilla

Mix all ingredients except vanilla and 1/2 cup cream. Cook and stir over low heat to soft ball stage (234 degrees). Add cream, cook to 228 degrees and add vanilla.
