PUMPKIN MUFFINS 
2 c. white flour
1 c. whole wheat flour
2 c. sugar
4 eggs
1 c. vegetable oil
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 tsp. baking powder
2 tsp. baking soda
2 c. (15 oz. can) pumpkin
1 c. chopped nuts
1 c. raisins

Preheat oven to 350 degrees. Oil muffin tins or line them with paper baking cups. Combine flour, sugar, eggs, oil, spices, baking powder, and baking soda in a large bowl. Stir until well blended (mixture will be stiff). Add pumpkin and mix well. Blend in nuts and raisins. Fill muffin cups about half full. Bake for 20 to 25 minutes. Makes about 35 muffins.
