PUMPKIN MUFFINS 
3/4 c. brown sugar, packed
2 eggs
1/4 c. butter, melted
1 c. pumpkin, mashed canned or cooked
1/2 c. buttermilk
1 c. flour
2 tsp. baking powder
1 c. whole wheat flour or oat bran flour
1 tsp. cinnamon
1 tsp. ground allspice
1/2 tsp. salt
1/4 tsp. ground cloves
1/2 c. walnuts, chopped
1/2 c. raisins

Combine sugar, eggs, and butter in a large mixing bowl; beat until sugar dissolves. Add pumpkin and buttermilk; beat until smooth.

Combine remaining ingredients; add to pumpkin mixture. Stir just to moisten dry ingredients. Spoon into greased or papered muffin tins, filling 2/3 full.

Bake at 400 degrees for 20-25 minutes. Makes 18 muffins.
