RHUBARB CAKE 
1/2 c. shortening
1 1/2 c. sugar
1/2 tsp. salt
1 egg
1 tsp. baking soda in 1 c. sweet or sour milk
2 c. plus 1 tbsp. flour
3 c. rhubarb, cut fine
1/4 c. candy sprinkles (optional)

Cream shortening, add sugar and mix well. Add salt and beat in egg. Add soda and milk mixture and flour. Stir in candy sprinkles and rhubarb. Pour into a 9x13 inch pan. Mix topping and sprinkle over batter.

TOPPING:

1/3 c. sugar
1/3 c. nuts (optional)
1 tbsp. cinnamon

Bake at 350 degrees 45 minutes.
