CHEESECAKE 
18 Zweibacks, rolled into fine crumbs
3 tbsp. butter
1 tbsp. sugar

FILLING:

1 lb. Philadelphia cream cheese, softened
1/2 c. sugar
1/8 tsp. cinnamon
1/2 tsp. vanilla
1 tsp. grated lemon rind
1 tbsp. lemon juice
2 eggs, separated
1 c. thick sour cream
1 tbsp. sugar
1 tsp. vanilla

Preheat oven to 300 degrees. Blend crumbs, butter and sugar. Press into bottom of 9 inch spring pan, well buttered. Bake 5 minutes and cool. Blend cheese with sugar, cinnamon, vanilla, lemon rind and lemon juice. Beat in egg yolks one at a time. Fold in stiffly beaten egg whites. Pour mixture on top of crumbs.

Bake 45 minutes at 300 degrees. Blend sour cream with tablespoon of sugar and teaspoon of vanilla. Spread on baked cake and bake 10 minutes more. Cool and remove rim of pan. Do not invert.
