BANANA JUMBO COOKIES 
1 c. soft shortening or butter
1 c. sugar
1/2 c. buttermilk or soured milk
2 eggs
1 c. mashed ripe bananas (2+)
1 tsp. vanilla
3 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. chopped nuts

Mix well shortening, sugar and eggs. Stir in bananas, buttermilk and vanilla. Blend flour, soda and salt; stir in. Blend in nuts. Chill 1 hour.

Heat oven to 375 degrees. Drop rounded tablespoons 2 inches apart onto lightly greased baking sheet. Bake about 10 minutes. (About 3 1/2 dozen cookies.)
