COCKALEEKLE SOUP 
Salt
1 boiled chicken, cut into pieces
9 c. water
3 onions, sliced
1 clove garlic, crushed
1 tbsp. parsley, chopped
1 bay leaf
1 tsp. poultry seasoning
Dash of cayenne
12 leeks, sliced (white part only)
6 med. potatoes, peeled & diced
Pepper

Put one tablespoon salt and all ingredients except last three in a large saucepan. Bring to a boil. Reduce heat and simmer, covered for 3 hours or until chicken is tender. Remove skin, bones from chicken, cut into bite-size pieces. Skim fat from broth and add chicken, leeks and potatoes. Cover and cook for 1/2 hour or until potatoes are cooked. Salt and pepper to taste. Serves 8 to 10.
