HOT AND SOUR SOUP 
8 shitake mushrooms
1 tbsp. sesame oil
4 scallions, sliced
1 c. frozen snow crab or diced cooked chicken &/or pork
2 tbsp. soy sauce
4 c. chicken broth
2-4 tbsp. chicken vinegar

Optional additions: Sweet green chilis, chopped and 1 cup cooked green peas.

Soak shitake and cut into strips. Heat oil in large pan and saute scallions. Add soy sauce and broth. Simmer about 5 minutes, add remaining ingredients and simmer a little while longer. Especially satisfying in winter!
