SOUR CREAM APPLE CAKE 
1 1/2 c. flour
3/4 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 c. light sour cream
2 eggs
3 to 4 apples, peeled, sliced & pre-cooked (3 to 4 min. in microwave)
1 tsp. cinnamon
2 tbsp. brown sugar

Mix together flour, sugar, powder, soda and salt. Mix together sour cream, eggs and 1/2 of the apples; add this to the flour mixture and stir only until moistened. Pour into greased 8 inch round cake pan and top with remainder of apples. Sprinkle the cinnamon and brown sugar over the top. Bake at 350 degrees for 55 to 60 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
