BREADED CHICKEN (Microwave) 
2-3 lbs. broiler chicken, cut up into 9-10 pieces and skin taken off
2/3 c. seasoned bread crumbs
1 tbsp. chopped parsley
1/2 tsp. salt
1/2 tsp. pepper
1 egg, beaten
1 tbsp. vegetable oil

Rinse chicken off and just kind of pat until dry. Put the bread crumbs, parsley, salt and pepper on a plate or tray. Mix egg and oil together in a small bowl. Dip pieces of chicken in egg mixture and coat by rolling in the crumb mixture. Put paper towel (3-4 sheets) on 12-14 inch microwave tray, put thicker portions of chicken toward outside. Cover with layer paper towels and microwave on high for 13 to 17 minutes until juicy. Let chicken stand covered for 6-10 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
