MEXICAN CASSEROLE | |
1 med. onion, chopped 1 lb. 95% lean ground beef 1 lb. ground turkey 1 (10 1/2 oz.) can cream of chicken soup, undiluted 1 (10 1/2 oz.) can cream of celery soup, undiluted 1 (10 1/2 oz.) can Nacho cheese soup, undiluted 1 (8 oz.) jar picante sauce (mild, med., hot - per taste) 1 (4 oz.) can chopped green chilies (mild, med., hot - per taste) 1 (8 oz.) pkg. taco flavored low salt tortilla chips 1 (13 x 9 x 2 inch) baking dish or pan 2 (2-3 qt.) saucepans (Use Campbell's "Special Request" 1/3 lower salt soup). 1. Preheat oven to 350 degrees. 2. Saute onions in butter until tender. 3. Brown ground beef and ground turkey together with onions. Drain fat. 4. Combine soups, picante sauce and chilies - heat and stir until smooth. 5. Spread 1/2 of meat mixture in bottom of 13 x 9 x 2 inch baking dish or pan. Layer 1/2 of soup mixture. Repeat layers. 6. Top with broken pieces of tortilla shells. 7. Bake uncovered at 350 degrees for 35-40 minutes. Serves 6-8. |
