QUICK PUMPKIN PIE 
2 eggs
1 can pumpkin pie mix
2 tbsp. butter, melted
3/4 c. sugar
1/2 c. biscuit mix
1 c. water
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ginger
1 c. evaporated milk

Grease and flour a 10-inch pie plate. Heat oven to 350 degrees. Put all ingredients in a blender at low for 2 minutes. Pour into pie plate. Bake about 50-60 minutes. Cool. Has very little crust. Can be mixed with an electric mixer.
