CHINESE COOKIES 
1 c. shortening or butter
1 c. sugar
1 egg, beaten
3 c. all purpose flour
1 1/2 tsp. baking soda
3 tbsp. almond extract
1 tbsp. corn syrup or honey
1 c. blanched almonds

Cream shortening and sugar together. Add egg. Mix flour and baking soda. Add with almond extract and syrup to first mixture and mix until smooth. Break off small pieces of dough and roll into balls and place on greased cookie sheet. Place an almond in center of each. Bake in preheated 375 degree oven until edges brown, about 10 minutes. Makes 4 dozen.
