MERRY CHRISTMAS PIE 
1 env. unflavored gelatin
1/4 c. cold water
1 c. sugar
3 tbsp. flour
1/4 tsp. salt
1 1/2 c. milk
1/2 tsp. almond flavoring
1/2 tsp. vanilla flavoring
1/2 c. heavy cream, whipped
2 egg whites
1 1/4. shredded coconut
10" baked pastry shell

Soften gelatin in cold water. Combine 1/2 cup of the sugar, flour and salt. Gradually add milk and cook over medium heat, stirring constantly until thick. Remove from heat. Chill until mixture begins to thicken. Add flavorings. Fold in whipped cream. Beat egg whites until foamy; gradually add remaining 1/2 cup sugar, beating until stiff. Fold into gelatin mixture. Carefully fold in 3/4 cup coconut. Pour into pastry shell. Pile remaining coconut on top. Chill.
