SCALLOPED CARROTS 
4 c. carrots, sliced
1 chopped onion
1 can cream of celery soup
3 tbsp. melted butter
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. diced cheddar cheese
3 c. herbed croutons

Cook chopped onion with sliced carrots. Mix above ingredients together. Place in casserole. Bake at 350 degrees just long enough to heat through (about 30 minutes).
