SOUTHERN CORNBREAD 
1/4 c. vegetable shortening or bacon grease
2 c. cornmeal
2 tbsp. flour
2 tsp. double acting baking powder
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 egg

Melt shortening in 9" iron skillet (or 9" square baking pan) in oven. Brush sides of pan with melted shortening. Sift together dry ingredients. Combine egg and buttermilk and stir into dry ingredients, along with melted shortening. Pour batter into the HOT pan. Bake at 450 degrees for 20 to 25 minutes or until light brown. Cut into squares or wedges, serve hot with butter. Serves 9. From Mom Sneads southern recipes.
