BLACKENED FISH 
BATTER:

1/2 c. milk
1 egg

SPICES:

Cajun seasonings for blackened fish
Paprika
Salt
Pepper

Dip fish in batter. Coat one side with cornmeal. Put spices on second side. Coat with cornmeal. Fry with small amount of butter. This is good with catfish or flounder fillets.
