2 1/2 c. white sugar Pinch of salt 1/2 c. white corn syrup 2 lg. egg whites, stiffly beaten 1 tsp. vanilla 1/4 c. cold water 2/3 c. white corn syrup Pecan halves Cook the sugar, water, BOTH measures of syrup, and salt together until it forms a hard crack stage when tested in ice water with ice cubes in it. When it reaches the hard-crack stage, pour over the egg whites with your mixer on beat. Add the vanilla. Beat until it loses its gloss and thickens. Drop by teaspoon onto wax paper. Add pecan halves. |
